Cleonice Mediterranean Bistro, Ellsworth

Garlicky Shrimp is a traditional Spanish tapas dish.

Ingredients:
1/3 cup extra virgin olive oil
1 to 4 tablespoons slivered garlic, to taste
1 to 4 tablespoons hot chili pepper pods, to taste
1 pound raw shrimp, peeled
1 teaspoon sherry
sea salt and pepper
1 tablespoon coarsely chopped flat-leaf parsley

Directions:
Preheat oven to 400 degrees. In an ovenproof 9-inch casserole dish put the olive oil, garlic and hot pepper pods. Place in oven for 4 to 5 minutes or until the garlic sizzles. Remove from oven, stir in the raw shrimp and sherry and return to oven for 2 minutes, or until the shrimp is just opaque. Remove from oven, season with coarse sea salt and pepper and parsley. Serve with plenty of crusty bread.
